|Josh Ozersky is the executive producer and host of Ozersky.TV. He also writes the “Taste of America” column for Time Magazine and is the author of The Hamburger: A History (2008) and Meet Me In Manhattan: A Carnivore’s Guide to New York City (2003). A winner of the James Beard Award for food writing, he was formerly the editor of New York Magazine‘s food blog, Grub Street, and the National Restaurant Editor of Citysearch. His writes a cooking column for Rachael Ray.com, and his videos about food and restaurants can also be seen every day on Ozersky.TV. His next book, Colonel Sanders and The American Dream, will be published next year. He lives in New York City.|
|Jesse Perez will be cooking our Texas barbecue. Jesse is one of the top chefs in Texas, and is actually in town to cook a dinner at the James Beard House. Jesse will be doing brisket, but not the usual hill country salt & pepper
brisket, but rather the kind that is done in southwestern Texas, with Latino inflections. Jesse is a master of chile rubs and seasonings, and his brisket will have a nice spice to it that will, I think, people will really love.
|Matt Fisher will be on Kansas City duty. Matt was the pitmaster for many years at RUB barbecue, which was one of the country’s top KC-style barbecues outside of Kansas City. Matt is now the pitmaster of Fletcher’s BBQ in Brooklyn, which is in my professional opinion one of the very best barbecue restaurants in this part of the country. Matt will be doing "wet" style KC spareribs.|
|Ed Wilson will be doing our Carolina style pulled pork. Ed is a very highly respected barbecuer, one of the top guys in the northeast, and was one of the original barbecuers selected from across the country by Danny Meyer to cook at the Big Apple BBQ Block Party. Ed will be doing a special recipe pork utilizing finely chopped crackling and a subtle but sharp pepper vinegar
|German Villatoro is the Hudson’s chef, and will cook alongside Ed, Matt, and Jesse. His restaurant, Hudson Common, will be doing one of their original "Uncommon" tacos. I’m thinking that German would be a great point man for working with all three guys, all of whom are CCd here, as I have no doubt they have many questions about the facilities, and will be putting their meat orders in through you.|
